  • 300g raw prawns, peeled and deveined
  • 2 medium tomatoes, roughly chopped
  • 1 red pepper, deseeded and sliced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp dried oregano or mixed herbs
  • 1/2 tsp smoked paprika (or regular if unavailable)
  • Salt and black pepper to taste
  • Juice of half a lemon
  • Optional: crusty bread or rice to serve

Method

1. Heat 1 tbsp olive oil in a large frying pan over medium-high heat. Add the sliced red pepper and cook for 5-6 minutes, stirring occasionally, until softened and starting to char at the edges.

2. Add half the minced garlic to the pan and cook for 1 minute until fragrant. Tip in the chopped tomatoes, dried herbs and smoked paprika. Season with salt and pepper.

3. Stir everything together and let the sauce simmer on medium heat for 8-10 minutes, pressing the tomatoes down gently until they break down into a thick, chunky sauce.

4. Push the sauce to the sides of the pan and add the butter and remaining 1 tbsp olive oil to the centre. Once foaming, add the remaining garlic and cook for 30 seconds.

5. Add the prawns in a single layer. Cook for 1-2 minutes per side until they turn pink and opaque. Do not overcook or they will go rubbery.

6. Stir the prawns through the pepper and tomato sauce. Squeeze over the lemon juice, taste and adjust seasoning.

7. Serve immediately with crusty bread to mop up the sauce, or over steamed rice.
