  • 4 thick slices of bread
  • 3 eggs
  • 3 tbsp milk
  • Pinch of salt
  • 1 tbsp butter
  • 1 tbsp vegetable oil
  • 1 tbsp honey
  • Small knob of butter (for the honey butter)

1. Crack the eggs into a wide, shallow bowl. Add the milk and a pinch of salt, then beat well with a fork until fully combined.

2. Place the bread slices into the egg mixture one or two at a time. Let each slice soak for about 30 seconds per side, pressing gently so the bread absorbs the egg fully. Don't rush this — good soaking means a custardy centre.

3. Heat the butter and oil together in a large frying pan over a medium heat. The oil prevents the butter from burning. Once the butter is foaming, add the soaked bread slices in a single layer — work in batches if needed.

4. Fry for 2 to 3 minutes on the first side without moving, until a deep golden crust has formed underneath. Flip carefully and fry for another 2 minutes on the second side until equally golden.

5. While the bread fries, melt the remaining small knob of butter in a small pan or microwave-safe bowl and stir in the honey until combined.

6. Transfer the eggy bread to plates and drizzle generously with the warm honey butter. Serve immediately while hot and crisp.
