Ingredients
- 2 lbs lean ground turkey
- 1/2 red pepper
- 1/2 yellow pepper
- 1/2 green pepper
- 1/2 white onion
- 6 oz bag of baby spinach
- 3 garlic cloves
- 2 tbsp olive oil
- 1/4 cup Worcestershire sauce
- 1 tsp cumin
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp paprika
1. Wash and slice the red, yellow, and green peppers.
2. Dice the onion and garlic.
3. Put a pan on medium-low heat, add the olive oil, and add the onions and peppers once the oil is hot.
4. When the peppers and onions are cooked through, add the garlic and cook for one more minute.
5. Chop the spinach, add it to the pan, and cook until wilted, stirring occasionally.
6. Add the ground turkey, Worcestershire sauce, and all the spices, and cook until the turkey is fully cooked through.
7. Strain off any excess liquid.
8. Serve over rice or in your favourite tortilla. I like to use either Mateo's medium salsa or Yellowbird blue agave sriracha on top. Add some chopped avocado if you have it.
