Ingredients

Serves2
  • 2 large cucumbers
  • ½ red onion, very thinly sliced
  • 1–2 jalapeños, thinly sliced (seeds in for heat, out for mild)
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp white wine vinegar
  • 1 tsp sesame seeds, plus extra to finish
  • 1 clove garlic, finely grated or minced
  • Salt, to taste

1. Slice the cucumbers into thin rounds or use a peeler to make ribbons. Place them in a colander, sprinkle with a generous pinch of salt, toss, and leave for 10 minutes to draw out excess water. This keeps the salad crisp rather than watery.

2. While the cucumbers drain, slice the red onion as thinly as you can and place in a large mixing bowl. Add the sliced jalapeño.

3. In a small bowl, whisk together the soy sauce, honey, white wine vinegar, and grated garlic until the honey is fully dissolved.

4. Pat the cucumber dry with kitchen paper or a clean tea towel, then add to the bowl with the onion and jalapeño.

5. Pour the dressing over the vegetables and toss well to coat everything evenly.

6. Add the sesame seeds and toss again. Taste and adjust — more honey if you want sweetness, more soy for saltiness, more vinegar for sharpness.

7. Leave to sit for 5 minutes before serving so the flavours can meld. Scatter over extra sesame seeds to finish.

Got a question while you're cooking?

e.g. What can I swap for paprika?
